For a long time I used to buy a hot chocolate mix that had random ingredients in it, then switched to an organic one that was much simpler, with just organic cacao and organic sugar (and no powdered milk). The kids love hot chocolate in the cold Canberra winters, so we used a reasonable amount of this not-inexpensive mix. One day I realised, I have organic raw cacao powder and organic raw sugar in my cupboard, why don’t I just make my own hot chocolate mix! I used the mill part of my food processor, and started with 1 1/2 cups of sugar to 1 cup of cacao powder (many recipes out there use 2 cups of sugar to 1 cup of cacao). This was unnecessarily sweet, though if you are just switching over from buying a commercial mix, you might need to titrate and wean the sweetener down until you are used to less.
